WHere is an easy take on a drink from our latest menu. Designed as a large-volume prepared mix which is bursting full of tastes of a Christmas time, rendering it ideal for hosting a celebration. Any leftover syrup you can use for morning drinks, puddings, or to mix additional servings of bikinis.
Bikini Recipe
Serves 10 people
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Combine the listed items into a pan, heat until it reaches a gentle boil, stirring to dissolve. Next, remove from the heat and let it to cool down fully. Decant into an clean bottle, close it keeping it in the refrigerator, it can be stored for about a month.
For the Cocktail Base: Pour all the liquid ingredients into a big jug, allow it to infuse for an hour, then filter it preferably using a fine cloth, to ensure it's completely strained.
To serve: Add 85ml from the cocktail base into your cocktail shaker filled with ice, gently stirring carefully for about 60 seconds until cold. Strain into an cold coupe glass or equivalent, top with a few cranberries adding the final touch with a light spray of mandarin oil over the drink.
